Whole Foods Study September 28

Today is the last day of the two-week whole foods study I have been blogging about. Since I did not do much today as far as substitutions go (aside from the water instead of soda), I want to end this blogging series by sharing a few resources for those who are interested in nutritional lifestyle changes and/or learning about whole foods. Well, the two go hand in hand.

Anyway, a few years ago I came across a TV station called Veria Living. When I moved, I could not find it anymore. I recently discovered that it's changed names on the TV listing to WOCKC. On Comcast in Chicago, that is channel 389. You can try their website at http://www.veria.com/tv/ to see if you can find a TV listing for you area. You can also see an overview of the TV shows they have.

Veria is also on Facebook:  https://www.facebook.com/VeriaWellness/info

I also use a cookbook that I won called "The Whole Truth" by Andrea Beaman. She used to have a show on Veria. Maybe she still does, I don't know.

So, that's it. Happy and Healthy Eating!

Whole Foods Study September 27

Only two more days (including today) and you won't have to read about my whole foods posts anymore :-) In case you don't know yet, this is part of a private study I am participating in for a friend.

Did you know that eggs, despite their bad reputation, are actually a whole food? Much has been said and written about cage free, organic, free-range and how misleading these labels can be. I can't sort that all out either, but I did check out the manufacturer of the eggs we buy online (Phil's in Illinois) and it seems better than most. The best would be to get eggs from someone who raises chickens in the neighborhood, but that kind of lifestyle is disappearing rapidly.

Well, I mentioned eggs because we had them for breakfast. For dinner we had wild-caught mahi mahi, sauteed zucchini, and a side salad.

Anyway, to get the skinny on the nutritional value of eggs and the wild caught fish vs farm-raised, read the full post.

Whole Foods Study September 26

Today was somewhat a bitter-sweet day. We ate our first home-grown bell pepper. What is the big deal? Well, despite starting almost a dozen plants, we only have five bell peppers. And only one, the one we ate today, reached a decent size. It's totally put to shame by the farmers market peppers in size.

Oh, but the taste. It was very sweet and intensely flavored. No wonder, it was on the vine a very long time. We picked it finally after about seven weeks because we did not want anything to happen to it. It was only partially red, but turned a nice crimson in the house.

So, what did we make with it? Well, I did not want the taste to get lost, so we simply grilled it with some purple potatoes. (In a foil packet on the grill).

I also made a couple of things that I am freezing for future use. Curious as to what they are? Well, then read on!

Oh, and in case you are new and have not followed this series: I am participating in a whole foods study for a friend. We are to substitute a whole food for a refined/processed food each day. My commitment was to go soda-free, but we are having fun along the way experimenting with other foods and ingredients.

Whole Foods Study September 25

We are on day 11 of the whole foods study in which I am participating. A few more days and so many ideas! Good thing that this will be an ongoing thing for me, personally. What do I mean? I will keep incorporating what I have learned.

Today I made yet another food: Ratatouille. We had it as a side (with baked chicken). Now, the recipes I have seen suggest serving ratatouille over rice and noodles. Next time I will have to do that as I did not find the dish particularly filling. It's also has a sort of mushy consistency, so I might cook it less than the 40 minutes they suggest. I did like the flavors of all the ingredients.

If you want to know exactly how I made the ratatouille and how I came up with the idea, you can read this post.

Whole Foods Study September 24

Today is day 10 of the whole foods study in which I am participating. So, it's almost over. However, I plan on incorporating what I have learned in the future. It is fun to learn about new foods and to try out new meal ideas.

For example, today I made a new quinoa dish. Oh, I am not new to quinoa, but I've always prepared it in a "sweet" way, sort of like rice pudding, with olive oil, raisins and cinnamon. Today I made it tabouli-style. For the full recipe, you can view this post.

Whole Foods Study Day September 23

Day 9 of the whole foods study still has me with more new food ideas. Dinner was not quite whole food as I added leftover sausage to warm whole wheat pasta (the dish also included red pepper, garlic, veggie and onion). But, I am keeping up with the no-soda habit and I also made a smoothie again instead of a chocolate shake. That is progress for me!

If you have somehow missed how this started or want to know exactly what this is and is not about, you can read this full explanatory post.

Whole Foods Study September 22

This is day nine of the whole foods study in which I am participating. I have learned a lot in that time just by exchanging information with other participants. It's not just about the whole foods, but also about making better choices for a lot of foods, even if they are not considered whole foods.

For example, choosing wild caught fish instead of farm raised, whole dairy instead of reduced fat, and coconut sugar instead of refined sugar or things like agave and honey, both of which I thought were okay.

We made a trip to two health stores today (Trader Joe's and Fresh Thyme Market). Some of the things I picked up were Himalayan pink salt, wild caught mahi mahi (it was on sale actually), and some loose spices that you weigh and measure yourself. I mainly use those for cold pickling and in marinades.

Anyway, my main change for today was that I made a smoothie (instead of ice cream shake). You can read what I put in it in my continued post.

Whole Foods Study September 21

It's hard to believe that today is day 7 of the whole foods study (try to substitute a whole food for a processed/refined food.

Sundays are a bit tough because we watch sports and so I don't put too much effort into cooking. I did stick with my

Now, if you have followed my ramblings, you might have noticed that I never talk about breakfast and rarely about lunch. Well, that's because my usual breakfast consists of oatmeal and raisins (not the instant kind), so there really is nothing to swap out there. I sometimes have eggs and breakfast meat, but not in a while.

My main success story is that I stuck with my have water instead of soda concept for the fifth day in a row now. That was my main goal, to not have soda for two weeks.

Anyway, If you are curious about what we did end up having for dinner, read the full post.

Whole Foods Study September 20

This is of course day 6 of the whole food study in which I am participating. It also marks my fourth soda-free day in a row.

Anyway, today I baked hormone- and antibiotic-free chicken breast that we got from a local butcher. It was also my first real try of cooking with coconut oil. (I infused it with herbs and garlic and put it on the chicken before baking).

I also created my own recipe for a sauce. I used red wine vinegar and horseradish mustard. Both were prior purchases from Trader Joe's, but I made sure to check the ingredients anyway (to make sure there was no sugar or other suspect additions).

When I looked for something to thicken the sauce with, I found some old whole grain brown rice flour in the cupboard, so I used that.

Want the full recipe for the sauce? You can find it in this post.

Whole Foods Study September 19

This is day 5 of the whole food study (substitute a whole food for a refined/processed food). I am keeping up with the water instead of soda and I also made my own salad dressing with vinegar and olive oil.

Well, a word to the wise in regards to making your own salad dressing (if you have never done so before): Make a small amount so you can experiment with it and make it better for next time! But, I hung in there and ate it.

If you want to know what I did wrong, read the full post.

Whole Foods Study September 18

This is day four of the whole foods study in which I am participating. So far, it has been a lot of fun because I get to interact (online) with other participants and exchange ideas.

Today was my second soda-free day (water with dinner) and I finished the leftover vegetable soup that I had made Monday for the first day of the challenge.

Want more details? Check out my full post.

Whole Foods Study September 17

This is day 3 of a two-week whole foods study trial.

My change was simple, but I hope it will lead to something good. I had water instead of soda with dinner and hope to do so for the rest of the study period.

We also made grilled purple potatoes as a side. Yes, potatoes do come in purple. They also come in blue and yes, nature makes them that way.

If you want to find out more about purple potatoes and how we "grill" them, read the whole post.

Whole Foods Study September 16

For two weeks, I am going to try to make better food choices, even though we are on a tight budget and I consider myself above average in food knowledge.

This is September 16, day 2.

We made grilled bison burgers for dinner. Now, I am not sure if they count as whole food, but they do have higher nutrients and less fat when compared to beef.

The big difference was in the way I made them.

The key points: Ground oats instead of bread crumbs, seasonings without MSG, almond milk instead of cow's milk, home-made pickles instead of mayonnaise.

Key findings: Store-bought bread crumbs might have MSG and corn syrup and the same might apply to seasoning mixes.

Want to know the details of my disturbing finds on labels and the whole recipe? Read my full post.

Whole Foods Study September 15

For two weeks, I am going to try to make better food choices, even though we are on a tight budget and I consider myself above average in food knowledge.

For September 15 I made soup with my own vegetable stock for dinner. Part of the ingredients were obtained from my garden, the others from a local farmers market.

Want to know how? Read my full post.
